We are glad to present a sample of the recipes created at one of our Veg Soul retreats, check back periodically as we will be updating the site with new recipes.

1. Curried Jerk Nut Meat

1/2 cup Sunflower seeds
1/2 cup Pumpkin seeds
2 sprigs Scallions – finely chopped
1 clove Garlic – pressed
1/4 cup Parsley – chopped
1 sm. Tomato – chopped
1/4 cup Carrots – grated
1/4 cup Red pepper – chopped
1/4 cup Orange - juiced
1/2 tsp. Fresh thyme – chopped
1 tsp. Jerk Seasoning
1/2 tsp. Mild curry powder
1/2 Avocado - diced
1 tbs. Olive oil
1 tbs. Nama Shoyu

DIRECTIONS
Process nuts in a food processor or homogenize in Champion Juicer with blank plate.
Place ground nuts in a bowl, add remaining ingredients and mix well.



2. Me-So-Rainbow Salad

1/2 head Romaine lettuce – sliced thinly
1 Cucumber – sliced thinly
2 Tomatoes - chopped
1 Beetroot - shredded
Dressing:
1/4 cup Apple cider vinegar
1/4 cup Sesame oil
1/2 tsp. Dried basil
1 tbs. sweet miso

DIRECTIONS
Place salad ingredients in a bowl. Blend dressing ingredients well and toss with salad.

3. Wild Rice Masala

1 cup wild rice, soaked
1/4 cup parsley, chopped
1/4 cup scallions, chopped
1/4 cup radishes, grated
1/4 cup carrots, grated
1 tsp. Briyani Masala
1/2 tsp. Spike
1 tbs. olive oil
1 tbs. chopped basil

DIRECTIONS
Soak wild rice for 24 hours, rinse and change the water at 8 hour intervals. Combine all
ingredients together. Mix well and enjoy.



4. Curry Plantain with Sun Dried Tomatoes

1 ripe plantains, thinly sliced
1/4 cup sun dried tomatoes soaked and sliced
1 tsp. lime juice
1 tsp. olive oil
1/2 tsp. Nama Shoyu
2 tbs. chopped parsley
2 tbs. chopped scallions
1/2 tsp. curry powder
1/2 tsp. fresh thyme leaves

DIRECTIONS
Combine all ingredients in a large bowl and enjoy.

5. Basil Tahini Dressing

1/4 cup raw sesame tahini
3 fresh basil leaves
1/4 tsp. Celtic sea salt
Pinch of Turmeric
1 tsp. fresh lime juice
1/8 cup water*
1 garlic clove

DIRECTIONS
Blend until smooth and creamy.
*Coconut water is used whenever possible.



6. Nut Milk

1 cups almonds - soaked
2 cups water
2 tsp. unsweetened carob powder
4 dates – to sweeten
1/2 tsp. vanilla

DIRECTIONS
Combine almonds and water in blender, blend thoroughly and strain. Combine
remaining ingredients with almond milk and blend.



7. Beet Meat

1 beet root
1 cup sun-dried tomatoes
1 cup of chopped spinach
1/2 cup pumpkin seeds - soaked
1/2 red onion - chopped
1 celery stalk - chopped
a few fresh sprigs of fresh rosemary and/or parsley
1 tsp of kelp seasoning

DIRECTIONS
Combine all ingredients in food processor with S-Blade and process for a few minutes and enjoy.
